Peanut Pasta with Salmon Balls
8 oz Mashed Salmon
1 jar Nafis Peanut Sauce 2 C. Bow-tie Pasta 2 tsp Soy Sauce 2 tsp Honey 2 tsp (to desired heat) Nafis Cumin or Spicy Peanut Condiment 1 Sliced Carrot 2 cups Broccoli 1 tsp Salt 1 tsp Garlic Powder Green Onion
Blanch the broccoli in boiling water until bright green. Shock in cold ice water, drain and set aside.
Mix the mashed salmon with soy sauce, garlic powder, green onions. formed in 2 inches balls. Pan sear balls for 4 minutes until browned.
Saute sliced carrots. Add African Peanut Sauce, Cumin, honey and simmer for 2 minutes. Add bow tie pasta, broccoli florets to the sauce and mix on low heat. Plate and garnish with salmon balls and scallions.
