Get yourself a nutritious vitamin-packed meal with Okra stew. Like Blackeye Peas, Okra is another staple in America popularized in the south. Although its origins are iffy, we can agree it is delicious. This week we combine Okra with Nafis Peanut Sauce for yet another quick meal from Nafis's Kitchen. So come on ya'll, let's make this together!
1/2 cup Freshly or frozen Okra
1/2 cup of fresh or frozen spinach
3 to 4 tbsp Nafis African Peanut sauce
1/4 cup water
2 cloves sliced garlic
salt and pepper to taste
(optional) Habanero pepper
Saute garlic briefly.
Add okra, and spinach.
Add water, peanut sauce, and habanero if desired.
Simmer low for 5 to 10 minutes,
Add salt and pepper to taste, and Enjoy!
